With schoolyard gardens in full swing, many spring vegetables have grown and are ready to harvest. Parker Elementary students, along with the school’s Nurse Anderson, harvested a spring salad mix.
They overwintered spinach using a row cover frame, and were able to harvest spinach throughout the winter and spring that they planted last fall!
The students also grew arugula and a variety of lettuces. These salad greens were washed and prepared to serve to the students as a classroom snack.
After the students harvested the salad greens, they weeded their beds and planted summer plants including tomatoes and peppers, and a full bed of sweet potatoes.
After planting, the students mulched the beds with straw and gave the plants a good watering. They are so looking forward to coming back to their school garden in the fall!
