It’s spring harvest time! By now you likely have arugula, lettuce, spinach, mustards and more coming up in your garden. Your green onion sprouts are sprouting up tall and your radishes have started to bulb. Kale, collards, and swiss chard leaves are filling out and all of this means … it’s time to start harvesting!
Here are some resources for engaging your community in the harvest:
- Download this flyer and fill in the day, time and any other information relevant to your harvest day. Share the flyer electronically or post in person.
- Prepare, plan and then party with your students and the spring harvest.
- Check this out for a refresher on safely maintaining, harvesting and preparing fresh produce.
- Have students circle the veggies they are bringing home so grown-ups know what’s in the bag.
And as always, some of the recipes we are enjoying right now:
Mustard Green and Roasted Beet Citrus Salad
Spinach Brownies with Peanut Butter Frosting
